This is wild thyme, also known as "zaatar," Romani hyssop, Bible hyssop. It serves as a base for the Jordanian zaatar.
During the Middle Ages, it was popular in soups, stuffings, seasoning game meat, e.g. venison. It's used to season fatty meats as it breaks down the oily taste. It's used as a tea, compound (herb) butter, which is then spread on proteins and vegetables.
This is a very light herb weight-wise. We've packaged it in a bag used for our 1/2 ounce and 1-ounce spices. The larger, 3.5 oz bottle (4 inches tall), which we use for packaging our spices, is packed with 0.90 ounce of this wild thyme.
