Sesame seeds are one of the oldest condiments dating back 5000 years. The seed comes from the sesame plant (Sesamum indicum) which Is an annual herb that produces pods containing the edible sesame seeds.
In Middle Eastern and Asian cuisine, the untoasted seeds are used to make tahini paste. One of my favorite foods. It's so, so easy to make your own tahini with either toasted or untoasted sesame seeds and a little olive oil - or sesame seed oil.
The seeds have a nutty, slightly sweet taste and aroma which is enhanced by toasting.
Store in an airtight container. Unrefrigerated seeds can be kept in a cool, dry place for up to three months; refrigerate the seeds for six months; freeze for up to one year.
