CUSTOM ORDER: Sumac, All-Natural from Ajloun Jordan
This custom listing is for five (5) pounds of Jordanian sumac, individual bags of either 1/2 or 1 lb bags.
The sumac bush produces deep red berries which are dried and ground into flakes. Originating in the Middle East, the spice adds a “lemony tartness” to dishes. The Jordanian sumac is a deeper purple or magenta. It's got quite a pleasant aroma. Please store in cool, dry place.
It’s used in salads, like Fattoush, cucumbers, used on grilled meats and fish. It also enhances hummus when sprinkled on top. I use it in one of my favorite dishes: chicken musakhan, which is shredded chicken, sumac, grilled red onion wrapped in shrak.
Musakhan Recipe
1 large onion, finely chopped
Olive oil
1/2 cup of sumac
2 pounds of cooked chicken, e.g. mix of dark and light meat that has been boiled
salt and pepper to taste
Shrak bread, cut into 4 triangles or pita bread split
In a medium frying pan, saute the onions in the olive oil until translucent. Add 1/2 cup of sumac and stir. Shred the chicken pieces and add to the onion mix. Season with salt and pepper. Roll in the shrak bread or pita bread and toast slightly in the oven. Serve warm.
Because it has an acidic or citrus quality, it’s even used in desserts.
